The milpa
Corn, beans and squash have always made more sense together.
The milpa is a planting system. Corn goes in first and grows tall. Beans climb the corn and put nitrogen back into the soil. Squash spreads low and wide, shading the ground so it holds moisture. Three crops that do better in relationship than alone.
Other seasonings begin in the spice rack. Trimilpa begins in the field.
We kept them together and built a seasoning out of them. Blue corn masa, black bean powder and butternut squash carry the body of the blend, and the smoke, ferment, chile and acid are built on top of that.

The Three Sisters

The founder
Made by one person in Hopkins, Minnesota.
I grew up in Waconia, moved to East Africa at twelve, worked alongside smallholder farmers in Tanzania, spent a stretch on a regenerative farm in Maui, and cooked in fine dining kitchens before going back for a Culinology degree. Trimilpa is where all of that lands.

I mix, fill and label every jar myself, in small batches, in a licensed Minnesota facility. On Thursdays you will find me at the Waconia farmers market.
